A while ago I posted this photo on Instagram, which received quite a lot of interest and requests to post the recipe… So here it is!
The pancakes are vegan, gluten-free, dairy-free, sugar-free, grain-free and ridiculously good for you with all the vitamins, antioxidants and superfood benefits packed into the cacao, berries, protein powder and cinnamon. It tastes like an absolute dream and is fantastic served with some yummy “nice cream” or maple syrup also. All the ingredients can be bought from your local supermarket and the recipe can accurately serve 2 people, or 1 if halved (which is what I did today). Recipe (makes enough for 2 people)
You will need:
- As many blueberries as you require (I go for about 1/4 cup)
- 1 large ripe banana (or two smallies)
- 2/3 cup Almond milk (I use Macro organic)
- A decent tsp of vanilla
- 3/4 cup buckwheat flour (gluten free)
- or one cup of ordinary flour
- 1 tsp baking powder
- A generous pinch of cinnamon
- Tsp vanilla protein powder if desired
- Coconut oil for the pan
- 2 tsp cacao
- 2 tsp coconut sugar
- dash water
- scoop of coconut oil
Poached pear can also be swapped for tamarillo, blueberries, raspberries, rhubarb etc.
Cook the mix up like normal, adding coconut oil to the pan when needed. Keep the pan at a medium heat and don’t let it get dry or they will stick fast!
Handy hint: You’ll be able to tell when to flip pancakes when the bubbles pop on top
Set pancakes aside on a plate and put in the oven while preparing toppings. Also chuck some plates in the oven to serve meal nice and hot!
Raw vegan chocolate sauce
Plate up your delicious creation and garnish with extra blueberries and chopped banana. Drizzle with choc sauce and enjoy your dessert for breakfast!
